Units are a way to compare amounts staked between different punters, while not having to worry about the dollar value.

So for example, if the staking plan says to have 1 unit on a bet, this will mean the same amount as a proportion of their bankroll to all punters.

Using units gives us a tool to keep track of results without the dollar value.
